flourless chocolate cake
1 3/4 sticks butter
7 ounces dakr chocolate (i used semi sweet chips)
2/3 cup brown sugar 4 large eggs (cold)
3 tbsp. flour
pinch of salt
preheat overn to 400'. grease a 9 inch round cake pan with 2 inch high sides and dust with flour.
melt butter and chocolate in a heavy sauce pan over low heat. off heat whisk in the sugar and the eggs one at a time. stir vigorously two or three times, then gently whisk in flour and salt. pour batter into the pan.
bake about 20 mins (i did 16).....knife was slightly gooey in middle when i checked. cake will poof up (d/t eggs). run knife around edge of pan, cool 10 minutes and then unmold and cool right side up on cake plate!
helpful hints: ( i seem to like my cakes just slightly 'underdone'...so be careful not to overbake. this actually does taste delightful warm.....especially with icecream (per the hubby's request!).....i think strawberries and a drizzle of ganache would be the right compliment also!
